Although cumin lamb is associated with Sichuan province, there is an unmistakable Muslim influence in it, a testament to the diverse cultures that have left their imprint on China’s foodways. This version, however, adapted from Danny Bowien of Mission Chinese fame, couldn’t be more American, since it lists both Budweiser and Coca-Cola among the ingredients. Consider it a belated Independence Day feast and a salute to the mixed up mash up that is our country’s (and the world’s) cuisine.
