Fried yellow rice with chickpeas, baked spinach, onions, and feta

One thing I’d like to get better at is creating my own dishes without recipes. This is probably when studying old episodes of Iron Chef would come in handy, applying their lessons to the decaying leftover ingredients in my pantry. My improvisation here paid off well, bringing together a bunch of different techniques gleaned elsewhere. This dish involved a combination of smoky fried chickpeas, spinach chips, and slow roasted onions. When combined with fail-proof ingredients like fried rice and melted cheese, it’s pretty hard to get it wrong.
